Ingredients
Scale
2 (28 ounce) cans crushed tomatoes
4 cups vegetable broth
1/2 cup heavy cream
1/4 cup fresh basil leaves, packed
1 tablespoon butter
Instructions
Place crushed tomatoes and vegetable broth in a large pot.
Bring the mixture to a simmer over medium heat. Cook for 10 minutes.
Remove the pot from the heat. Stir in the heavy cream and butter until melted and combined.
Add the fresh basil leaves. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.
Heat gently, do not boil, before serving.
Notes
You can substitute whole milk for heavy cream for a lighter soup, but the texture will be less rich.
Taste the soup before adding salt or pepper, as canned tomatoes vary in sodium content.
For a smoother texture, press the blended soup through a fine-mesh sieve.
