Ingredients
Scale
1 flatbread (about 6-8 inches)
2 tablespoons tomato sauce or pizza sauce
1/4 cup fresh mozzarella cheese, sliced or torn
2-3 fresh basil leaves
1 teaspoon olive oil
Pinch of salt
Instructions
Preheat your toaster oven or conventional oven to 375°F (190°C).
Place the flatbread on a baking sheet.
Spread the tomato sauce evenly over the flatbread, leaving a small border.
Arrange the mozzarella pieces on top of the sauce.
Bake for 4-5 minutes, or until the cheese is melted and bubbly.
Remove from the oven. Drizzle with olive oil and sprinkle with salt.
Top with fresh basil leaves. Slice and serve immediately.
Notes
You can use store-bought pre-baked naan or pita bread as a substitute for flatbread.
For extra flavor, add a few thin slices of tomato before adding the cheese.
If you do not have an oven, you can cook this on a skillet over medium heat until the cheese melts, covering the skillet to trap heat.
