Ingredients
Scale
2 large Russet potatoes
1 tablespoon olive oil
1 teaspoon coarse salt
Pinch of black pepper
Instructions
Scrub the potatoes well under running water and dry them completely with a paper towel.
Pierce each potato 6 to 8 times deeply all over using a fork. This allows steam to escape.
Rub the entire surface of each potato with olive oil.
Sprinkle the coarse salt and pepper evenly over the oiled skin.
Place the seasoned potatoes directly into the air fryer basket, ensuring they do not touch each other if possible.
Set the air fryer temperature to 400 degrees Fahrenheit (200 degrees Celsius).
Cook for 35 to 45 minutes, flipping the potatoes halfway through the cooking time.
Check for doneness by squeezing the potato gently; it should yield easily. If not, continue cooking in 5-minute increments.
Remove from the air fryer, slice open lengthwise, and fluff the interior with a fork before adding your desired toppings.
Notes
For extra crispy skin, you can lightly rub the potatoes with a small amount of baking powder mixed with the salt before adding oil.
If your potatoes are very large (over 12 ounces each), increase the cook time by 5 to 10 minutes.
This recipe works well with Yukon Gold potatoes, but Russets provide the best fluffy interior texture.
