Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1/2 cup dried cranberries
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk or water (for glaze)
  • 1/2 teaspoon lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the sugar and eggs until pale and fluffy. Stir in the almond extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the sliced almonds and dried cranberries.
  5. Shape the dough into a log, about 10 inches long and 2 inches wide, on the prepared baking sheet.
  6. Bake for 25-30 minutes, until the log is golden brown and firm. Let it cool on the baking sheet for 10 minutes.
  7. Reduce the oven temperature to 300°F (150°C).
  8. Carefully slice the warm log diagonally into 1/2-inch thick slices.
  9. Lay the slices cut-side down on the baking sheet. Bake for another 10-12 minutes per side, until lightly toasted and crisp. Let cool completely.
  10. To make the glaze, whisk together the powdered sugar, milk or water, and lemon juice until smooth.
  11. Dip the top of each cooled biscotti into the glaze. Let the glaze set completely on a wire rack.

Notes

  • You can substitute chopped pistachios for some of the almonds for a different look.
  • For a stronger almond flavor, add a small amount of almond zest to the dough.
  • Store leftover biscotti in an airtight container at room temperature.
