Bake these simple Almond Joy Cookies that taste just like the classic candy bar, featuring coconut, chocolate, and almonds in a chewy cookie form. This recipe uses only four ingredients for quick dessert making.

Ingredients

Scale
  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups shredded sweetened coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped almonds (plus extra for topping)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the sweetened condensed milk, shredded coconut, and chocolate chips. Mix until everything is evenly coated.
  3. Fold in the chopped almonds.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet, leaving space between each cookie.
  5. Press a few extra chopped almonds lightly onto the top of each cookie mound.
  6. Bake for 10 to 12 minutes, or until the edges are lightly golden brown. Watch them closely as they can brown fast.
  7. Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, you can melt half of the chocolate chips and drizzle them over the cooled cookies.
  • If you prefer a softer cookie, slightly underbake them by one minute.
  • You can substitute milk chocolate chips for semi-sweet if you like a sweeter treat.
