Ingredients
Scale
1 9-inch unbaked pie crust
2 cups mashed sweet potatoes (about 3 medium sweet potatoes)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/2 cup heavy cream
1/4 cup pure maple syrup
2 large eggs, lightly beaten
2 tablespoons bourbon
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
Pinch of salt
Instructions
Preheat your oven to 375 degrees F. Place the pie crust on a baking sheet.
In a large bowl, combine the mashed sweet potatoes, granulated sugar, and brown sugar. Mix until smooth.
Whisk in the heavy cream, maple syrup, eggs, bourbon, and vanilla extract until well combined.
Stir in the cinnamon, ginger, nutmeg, and salt. Mix gently.
Pour the sweet potato filling into the unbaked pie crust.
Bake for 45 to 55 minutes, or until a knife inserted near the center comes out clean.
Let the pie cool completely on a wire rack before slicing and serving.
Notes
For a smoother filling, you can press the mashed sweet potatoes through a fine-mesh sieve before mixing.
If you prefer not to use bourbon, substitute it with an extra tablespoon of maple syrup and a splash of water.
This pie tastes even better the next day once the flavors have settled.
