Bake these rich, fudgy chocolate mint cookies that feature the distinct flavor of Andes Mints. They are soft, chewy, and perfect for holiday baking or any time you crave a festive treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk (or 1/2 cup milk mixed with 1/2 teaspoon white vinegar, let sit 5 minutes)
  • 1 cup Andes Mints, roughly chopped, plus extra for topping

Instructions

  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This is the Spoon’s foundation for texture.
  2. Beat in the eggs one at a time, then mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. This is the Sprout adding brightness to the cocoa.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  5. Pour in the buttermilk and mix until the dough comes together. Do not overmix.
  6. Fold in the 1 cup of roughly chopped Andes Mints.
  7. Cover the dough and chill in the refrigerator for at least 30 minutes. Chilling helps prevent spreading.
  8. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  9. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake for 9 to 11 minutes. The edges should look set, but the centers should still look slightly soft for a chewy result.
  11. Immediately after removing the cookies from the oven, press a few extra Andes Mint pieces onto the top of each warm cookie. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra fudgy texture, use Dutch-process cocoa powder.
  • If you want a stronger mint flavor, add 1/4 teaspoon of pure peppermint extract along with the vanilla extract.
  • These make excellent homemade gifts during the Christmas cookie season.
