Ingredients
Scale
3-4 lb pork shoulder, bone in or boneless
2 tablespoons olive oil
1 large onion, roughly chopped
4 cloves garlic, smashed
1 teaspoon salt
1/2 teaspoon black pepper
1 quart apple cider
1/2 cup apple cider vinegar
2 tablespoons brown sugar
2 sprigs fresh rosemary
Instructions
Pat the pork shoulder dry and season it with salt and pepper.
Heat the olive oil in a large Dutch oven over medium-high heat.
Sear the pork shoulder on all sides until deeply browned. Remove the pork and set it aside.
Add the chopped onion to the pot and cook until softened, about 5 minutes.
Add the smashed garlic and cook for 1 minute more until fragrant.
Pour in the apple cider and apple cider vinegar, scraping up any browned bits from the bottom of the pot.
Stir in the brown sugar.
Return the pork shoulder to the pot. Add the rosemary sprigs. The liquid should come about halfway up the side of the pork.
Bring the liquid to a simmer on the stovetop.
Cover the Dutch oven and transfer it to a preheated oven at 325°F (160°C).
Braise for 3 to 4 hours, or until the pork is fork-tender.
Remove the pork from the pot. Skim excess fat from the sauce if desired, then shred the pork using two forks.
Return the shredded pork to the sauce and toss to coat before serving.
Notes
For the best flavor, use unfiltered apple cider.
