Ingredients

Scale
  • 1 cup Apple Cider
  • 1 cup Granulated Sugar, plus 1/2 cup for coating
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon, plus 1/4 cup for coating
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Allspice
  • 1 3/4 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 large Egg
  • 1/2 cup Buttermilk
  • 2 tablespoons Unsalted Butter, melted
  • Vegetable Oil, for frying

Instructions

  1. In a small saucepan, combine the apple cider, 1 cup of granulated sugar, salt, 1 teaspoon of cinnamon, nutmeg, and allspice. Bring to a simmer over medium heat. Cook, stirring occasionally, until the mixture thickens slightly, about 10-12 minutes. Remove from heat and set aside to cool. This is your cider reduction.
  2. In a medium bowl, whisk together the flour, baking powder, and baking soda.
  3. In a separate bowl, whisk the egg, buttermilk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in 1/4 cup of the cooled apple cider reduction into the batter.
  6. In a deep, heavy pot or dutch oven, heat about 3 inches of vegetable oil to 350 degrees F (175 degrees C).
  7. While the oil heats, prepare the coating by mixing the remaining 1/2 cup of granulated sugar and 1/4 cup of cinnamon in a shallow dish.
  8. Use a small cookie scoop or two spoons to carefully drop spoonfuls of batter into the hot oil. Work in small batches to avoid overcrowding the pot.
  9. Fry for 2-3 minutes per side, turning once, until deep golden brown.
  10. Remove the donut holes with a slotted spoon and drain briefly on a paper towel-lined plate.
  11. While still warm, immediately roll the donut holes in the cinnamon-sugar mixture until fully coated.
  12. Serve warm. Drizzle any remaining apple cider reduction over the top for extra decadence, if desired.

Notes

  • The apple cider reduction adds the deeply concentrated apple flavor that makes these special.
  • Keep your oil temperature steady for evenly cooked centers.
  • These are best enjoyed the day they are made.
