  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 crisp apples, cored and chopped
  • 1/4 cup chopped pecans, toasted
  • 1/4 cup crumbled goat cheese (optional)
  • For the Maple Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread in a single layer.
  3. Roast for 20-25 minutes, or until tender and lightly caramelized. Let cool slightly.
  4. While the squash is roasting, prepare the maple dressing. In a small bowl, whisk together 3 tablespoons of olive oil, maple syrup, apple cider vinegar, and Dijon mustard. Season with salt and pepper to taste.
  5. In a large bowl, combine the roasted butternut squash, chopped apples, and toasted pecans.
  6. Drizzle with the maple dressing and toss gently to coat.
  7. If using, sprinkle with crumbled goat cheese.
  8. Serve immediately.

Notes

  • You can toast pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until fragrant.
  • For a vegan option, omit the goat cheese.
  • Feel free to add other seasonal ingredients like pomegranate seeds or dried cranberries.
