Ingredients

Scale
  • 1 pint cherry or grape tomatoes
  • 1 block (8 oz) feta cheese
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz pasta (like penne or rotini)
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Place the cherry tomatoes in a 9×13 inch baking dish.
  3. Nestle the block of feta cheese in the center of the tomatoes.
  4. Drizzle the olive oil over the tomatoes and feta.
  5. Sprinkle the minced garlic, oregano, salt, and pepper over everything.
  6. Bake for 30 to 35 minutes, or until the tomatoes burst and the feta is soft and slightly browned.
  7. While baking, cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.
  8. Remove the baking dish from the oven. Mash the roasted feta and tomatoes with a fork to create a creamy sauce.
  9. Add the drained pasta to the baking dish. Toss well to coat the pasta in the sauce. Add a splash of reserved pasta water if the sauce seems too thick.
  10. Stir in the fresh basil. Serve immediately.

Notes

  • You can use any small pasta shape you have on hand.
  • Taste the sauce before adding extra salt; feta is naturally salty.
  • For extra brightness, add a squeeze of fresh lemon juice after mixing.
