Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a mini-muffin pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a separate large bowl, whisk the granulated sugar and egg until combined.
  4. Stir in the pumpkin puree, melted butter, milk, and vanilla extract until smooth.
  5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Spoon the batter into the prepared mini-muffin pan, filling each cup about two-thirds full.
  7. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the donut holes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the donut holes cool, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons milk, and vanilla extract until smooth. Add more milk, a tiny bit at a time, if the glaze is too thick.
  10. Dip the cooled donut holes into the glaze or drizzle the glaze over the tops. Let the glaze set before serving.

Notes

  • You can substitute whole wheat flour for half of the all-purpose flour for a slightly heartier bite.
  • The warmth of fresh spices makes these donuts special; use fresh spices if you have them.
  • These are best enjoyed the day they are made.
