Make the best classic deviled eggs with a rich, creamy filling every time. This foolproof recipe is perfect for parties, holidays, and potlucks.

Ingredients

Scale
  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika, for garnish

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring water to a rolling boil over high heat. Once boiling, remove the pan from the heat, cover it, and let the eggs stand for exactly 12 minutes.
  2. Immediately transfer the eggs to an ice bath (a bowl filled with ice and cold water) to stop the cooking process. Let them cool completely, about 15 minutes. This step helps with easy peeling.
  3. Once cool, carefully peel the eggs. Slice each egg in half lengthwise. Gently scoop the yolks into a medium bowl.
  4. Place the egg white halves on a serving platter.
  5. Mash the egg yolks thoroughly with a fork until they are fine and crumbly. This is key for a smooth filling.
  6. Add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Mix until the filling is completely smooth and creamy. Taste and adjust seasoning if needed.
  7. Spoon or pipe the yolk mixture back into the hollows of the egg white halves. For a classic look, use a spoon; for a fancier presentation, use a piping bag fitted with a star tip.
  8. Lightly dust the tops of the filled eggs with paprika before serving.

Notes

  • For perfectly easy-to-peel eggs, make sure your eggs are not extremely fresh (eggs that are one week old peel much easier).
  • If you prefer a Southern Style Deviled Eggs flavor, add 1 tablespoon of sweet pickle relish to the yolk mixture.
  • You can make the filling up to one day ahead and store it covered in the refrigerator. Fill the egg whites just before serving for the best texture.
