Ingredients
Scale
1 pound ground beef
1 packet taco seasoning mix
1/2 cup water
1 head iceberg lettuce, chopped
1 large tomato, diced
1/2 cup chopped onion
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) corn, drained
1 cup shredded cheddar cheese
1 cup crushed tortilla chips or Doritos (optional)
1 cup Catalina dressing or your preferred dressing
Instructions
Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
Stir in the taco seasoning and water according to package directions. Simmer for 5 to 7 minutes until the sauce thickens slightly. Set aside and keep warm.
In a very large bowl, combine the chopped lettuce, diced tomato, kidney beans, corn, and onion.
If making a layered salad, spread the vegetable mixture evenly in a large serving dish.
Top the vegetables with the seasoned ground beef mixture.
Sprinkle the shredded cheese evenly over the beef layer.
If using, sprinkle the crushed tortilla chips or Doritos over the cheese layer for crunch.
Drizzle the Catalina dressing over the top just before serving, or serve the dressing on the side.
Notes
For a healthier version, skip the Doritos and use baked tortilla chips or skip the chips entirely.
You can prepare the meat and chop the vegetables up to one day ahead. Store them separately in the refrigerator.
Use ground turkey or shredded cooked chicken instead of ground beef for a different flavor profile.
