Discover how to make incredibly fudgy brownies using black beans instead of flour. These brownies are a delicious way to sneak in extra vegetables while enjoying a classic treat.

Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup melted coconut oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a food processor, combine the rinsed black beans and eggs. Process until smooth.
  3. Add the cocoa powder, melted coconut oil, sugar, and vanilla extract to the food processor. Process until well combined.
  4. Stir in the baking powder and salt. Mix until just incorporated.
  5. If using, fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the brownies cool completely in the pan before cutting and serving.

Notes

  • For an extra fudgy texture, do not overbake.
  • You can substitute maple syrup for sugar for a refined sugar-free option.
  • Add chopped nuts for extra crunch.
