Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup grated zucchini, squeezed dry
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, oats, baking soda, baking powder, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a small bowl, whisk together the milk, lemon zest, and lemon juice.
  6. Alternately add the dry ingredient mixture and the milk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined. Do not overmix.
  7. Gently fold in the grated zucchini and the blueberries.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Bake for 20 to 24 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Squeeze the excess water from the grated zucchini; this keeps your muffins from becoming soggy.
  • If using frozen blueberries, do not thaw them before adding to the batter.
  • For extra crunch, sprinkle a little coarse sugar on top before baking.
  • This recipe honors the balance Spoon and Sprout bring to our kitchen—comforting oats grounded with fresh lemon and fruit.
