Ingredients
Scale
1 cup uncooked white rice
2 cups chicken broth
1 tablespoon butter
1/2 cup chopped onion
2 cups broccoli florets, fresh or frozen
1 can (10.5 ounces) condensed cream of chicken soup
1 cup milk
2 cups shredded sharp cheddar cheese, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Cook the rice according to package directions using the chicken broth instead of water.
While the rice cooks, melt the butter in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the broccoli florets to the skillet. Cook until tender-crisp, about 5 to 7 minutes.
In a large bowl, whisk together the cream of chicken soup, milk, 1.5 cups of the shredded cheddar cheese, salt, and pepper.
Fold the cooked rice, the onion, and the broccoli mixture into the soup mixture. Stir until everything is well combined.
Pour the mixture into the prepared baking dish.
Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
Bake for 25 to 30 minutes, or until bubbly and the cheese on top is melted and golden.
Let it stand for 5 minutes before serving.
Notes
You can use frozen chopped broccoli if you prefer. Thaw and drain it before adding it to the onions.
For a brighter flavor, use half sharp cheddar and half Monterey Jack cheese.
If your children are hesitant about green flecks, chop the cooked broccoli very small before mixing it in.
