This Brown Butter Bourbon Pecan Pie recipe brings a deep, comforting flavor to your holiday table. We blend the richness of browned butter with a hint of bourbon for a truly memorable pie. It’s the perfect balance of tradition and a new bright note.

Ingredients

Scale
  • 1 (9-inch) unbaked pie crust
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs, lightly beaten
  • 1/2 cup light corn syrup
  • 1/4 cup heavy cream
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions

  1. Brown the butter: Melt the butter in a saucepan over medium heat. Continue cooking, stirring often, until the butter foams, then develops brown bits and smells nutty. Remove from heat immediately and pour into a large bowl, scraping in all the browned bits.
  2. Whisk the sugars into the warm brown butter until combined.
  3. In a separate bowl, lightly beat the eggs. Whisk in the corn syrup, heavy cream, bourbon, vanilla extract, and salt.
  4. Slowly pour the wet mixture into the brown butter and sugar mixture, whisking until everything is smooth.
  5. Stir in the pecan halves.
  6. Pour the filling into the unbaked pie crust.
  7. Bake at 350°F (175°C) for 50 to 60 minutes, or until the center is mostly set with a slight jiggle.
  8. Let the pie cool completely on a wire rack before slicing.

Notes

  • Browning the butter is key; watch closely so it does not burn. The brown bits hold much of the flavor.
  • If the crust edges start to brown too quickly, cover them loosely with foil during baking.
  • This pie tastes even better the day after it is made, allowing the flavors to settle.
