Whip up these delightful Brown Butter Pretzel Truffles for a perfect blend of sweet and salty. This recipe captures the comforting traditions of Spoon with a fresh twist from Sprout.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup finely crushed pretzels
  • 8 ounces semi-sweet chocolate, melted
  • 1/4 cup finely crushed pretzels for coating

Instructions

  1. Melt the butter in a saucepan over medium heat. Cook, stirring often, until the foam subsides and the milk solids turn golden brown and smell nutty. This is your brown butter. Watch it closely to prevent burning.
  2. Pour the brown butter into a heatproof bowl. Let it cool slightly, about 10 minutes.
  3. Whisk the powdered sugar and vanilla extract into the cooled brown butter until smooth.
  4. Stir in the 1 cup of crushed pretzels until fully combined. The mixture will be thick.
  5. Chill the dough in the refrigerator for at least 30 minutes, or until firm enough to roll.
  6. Roll the chilled dough into small, bite-sized balls (about 1 inch each). Place them on a parchment-lined baking sheet.
  7. Melt the semi-sweet chocolate using a double boiler or in short bursts in the microwave.
  8. Dip each truffle into the melted chocolate, allowing excess to drip off.
  9. Immediately roll the coated truffles in the remaining 1/4 cup of crushed pretzels.
  10. Return the truffles to the parchment-lined sheet and chill until the chocolate is set, about 1 hour.

Notes

  • Browning the butter creates deep flavor; do not skip this step.
  • If the dough is too sticky after chilling, work quickly when rolling.
  • Store these truffles in an airtight container in the refrigerator.
