Ingredients
Scale
1 head cauliflower, cut into small florets
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsweetened plant milk (for coating)
1/2 cup Buffalo sauce
1/4 cup butter or plant-based butter, melted
12 small corn or flour tortillas
For the Slaw:
2 cups shredded cabbage mix
1/2 cup crumbled blue cheese
1/4 cup mayonnaise or vegan alternative
1 tablespoon white vinegar
1 teaspoon Dijon mustard
Pinch of salt and pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, toss the cauliflower florets with flour, salt, and pepper until lightly coated.
Dip the floured cauliflower into the plant milk, letting excess drip off.
Place the coated cauliflower on the prepared baking sheet. Bake for 20 minutes, flipping halfway through.
While the cauliflower bakes, prepare the slaw. In a separate bowl, combine shredded cabbage, blue cheese, mayonnaise, vinegar, Dijon mustard, salt, and pepper. Mix well.
In a small bowl, whisk together the Buffalo sauce and melted butter.
Remove the cauliflower from the oven. Drizzle or toss the baked cauliflower with the Buffalo sauce mixture until fully coated.
Return the sauced cauliflower to the oven and bake for another 10-12 minutes until slightly crispy.
Warm the tortillas according to package directions.
Assemble your tacos: Place a portion of sauced buffalo cauliflower onto each warm tortilla. Top generously with the Blue Cheese Slaw. Serve immediately.
Notes
You can use an air fryer for crispier cauliflower; cook at 375°F for 12-15 minutes, tossing halfway.
Adjust the amount of Buffalo sauce to control the heat level.
If you prefer a tangier slaw, add a teaspoon of lemon juice.
