Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 cup quick-cooking grits
  • 3 cups water or milk
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, sliced (for garnish)

Instructions

  1. Toss the shrimp with Cajun seasoning. Set aside.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  3. In the same skillet, melt the remaining 1 tablespoon of butter. Add onion and cook until softened, about 4 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and heavy cream. Bring to a simmer.
  6. In a separate saucepan, bring water or milk to a boil. Slowly whisk in grits and salt. Reduce heat to low.
  7. Cook, stirring frequently, until grits are thick and creamy, about 5-7 minutes for quick-cooking grits. Stir in black pepper.
  8. Remove grits from heat. Stir in the shredded cheddar cheese until melted and smooth.
  9. Gently fold the cooked shrimp into the grits.
  10. Serve immediately, garnished with sliced green onions.

Notes

  • You can adjust the amount of Cajun seasoning based on how spicy you like your food.
  • For richer flavor, use half milk and half water for the grits.
  • This dish comes together quickly, perfect for a weeknight meal.
