Ingredients
Scale
1 recipe Double Pie Crust (enough for a double crust pie)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
6 medium apples (about 2 1/2 pounds), peeled, cored, and sliced 1/4 inch thick
1 cup apple cider
1/4 cup caramel sauce (plus extra for drizzling)
1 tablespoon lemon juice
1 large egg, beaten with 1 teaspoon water (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions
Prepare your double pie crust. Line the bottom of a 9-inch pie dish with one crust. Chill while you prepare the filling.
In a large bowl, whisk together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and cloves.
Add the sliced apples to the dry ingredients. Toss gently until the apples are evenly coated.
In a separate small bowl, whisk together the apple cider, caramel sauce, and lemon juice. Pour this liquid evenly over the apple mixture.
Pour the apple filling into the prepared pie crust.
Place the top crust over the filling. Trim the edges and crimp to seal. Cut several vents in the top crust to allow steam to escape.
Brush the top crust lightly with the egg wash and sprinkle with coarse sugar.
Bake the pie at 425°F (220°C) for 15 minutes.
Reduce the oven temperature to 375°F (190°C). Continue baking for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them with foil.
Let the pie cool on a wire rack for at least 3 hours before slicing. Drizzle with extra caramel sauce just before serving.
Notes
We suggest using a mix of tart and sweet apples, like Granny Smith and Honeycrisp, for the best flavor balance.
If your apple cider is thin, you can reduce it slightly on the stovetop before mixing to concentrate the flavor.
This pie tastes wonderful served warm with a scoop of vanilla ice cream.
