Make sweet, caramelized pineapple rings on the grill. This recipe works well as a simple dessert or a tropical side dish for barbecue meals.

Ingredients

Scale
  • 1 whole ripe pineapple
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Prepare the grill for medium heat. Clean and lightly oil the grates.
  2. Peel and core the pineapple. Slice the pineapple into rings about 3/4 inch thick.
  3. In a small bowl, mix the melted butter, brown sugar, cinnamon (if using), and salt to create the glaze.
  4. Brush both sides of each pineapple ring generously with the glaze mixture.
  5. Place the pineapple rings directly on the oiled grill grates.
  6. Grill for 3 to 4 minutes per side. Watch closely to prevent burning due to the sugar content.
  7. You are looking for deep golden-brown grill marks and a soft, caramelized texture.
  8. Remove from the grill and serve immediately.

Notes

  • Select a pineapple that feels heavy for its size and has a sweet aroma at the base.
  • For a dessert option, serve with a scoop of vanilla ice cream or a drizzle of rum sauce.
  • As a side dish, serve alongside grilled chicken or pork.
  • If your pineapple is very thick, you may need to reduce the heat slightly to prevent the outside from burning before the inside softens.
