Ingredients

Scale
  • 1 head cauliflower (riced)
  • 1 tablespoon avocado oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 2 cloves garlic (minced)
  • 1/4 cup soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 large egg (beaten)
  • Salt and pepper to taste

Instructions

  1. Heat avocado oil in a large skillet or wok over medium-high heat.
  2. Add onion and carrots, cooking until softened, about 3 minutes.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Push vegetables to one side of the skillet. Pour the beaten egg into the empty space and scramble until cooked through.
  5. Add the riced cauliflower and frozen peas to the skillet. Stir well to combine with the egg and vegetables.
  6. Cook the cauliflower mixture for 5-7 minutes, stirring often, until it softens slightly.
  7. Pour in the soy sauce or tamari and sesame oil. Toss everything together until evenly coated.
  8. Season with salt and pepper as needed. Serve immediately.

Notes

  • Use pre-riced cauliflower to save prep time.
  • For a richer flavor, add a dash of fish sauce with the soy sauce.
  • If you prefer no egg, simply omit it and proceed with the vegetables.
