1 cup shredded Gruyere cheese
1/2 cup panko breadcrumbs (optional)
Instructions
Preheat your oven to 400°F (200°C).
Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
While the cauliflower roasts, melt butter in a large saucepan over medium heat.
Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk until smooth.
Bring to a simmer, stirring frequently, until the sauce thickens.
Stir in garlic powder, onion powder, and nutmeg.
Remove from heat and stir in cheddar and Gruyere cheeses until melted and smooth.
Add the roasted cauliflower to the cheese sauce and stir to coat.
Transfer to a baking dish. If desired, top with panko breadcrumbs.
Bake for 10-15 minutes, or until bubbly and golden brown on top.
Notes
For an extra cheesy flavor, you can add a pinch of cayenne pepper to the sauce.
