Ingredients

Scale
  • 1 head cauliflower
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup corn (optional, for color/texture)
  • 1/2 cup chopped red onion
  • 1/2 cup chopped bell pepper (any color)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Toppings: Avocado, cilantro, lime wedges

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rice the cauliflower using a food processor or box grater. You want a fine, rice-like texture.
  3. In a bowl, mix the riced cauliflower, eggs, almond flour, salt, and pepper until well combined.
  4. Divide the mixture into 6 equal portions on the prepared baking sheet. Press each portion into a thin, round tortilla shape (about 5-6 inches wide).
  5. Bake for 12-15 minutes, flip carefully, and bake for another 5-7 minutes until firm and lightly browned.
  6. While tortillas cook, prepare the filling: Heat olive oil in a skillet over medium heat.
  7. Add red onion and bell pepper; cook until softened, about 5 minutes.
  8. Stir in black beans, cumin, and chili powder. Cook for 3-4 minutes until heated through. Add corn now if using.
  9. Fill each warm cauliflower tortilla with the black bean mixture.
  10. Top with fresh avocado, cilantro, and a squeeze of fresh lime juice. Serve immediately.

Notes

  • For crispier tortillas, press them very thin before baking.
  • You can substitute black beans with pinto beans or lentils.
  • Feel free to add a dash of your favorite hot sauce to the filling for extra warmth.
  • These tortillas are best eaten the day they are made.
