Ingredients
Scale
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground black pepper
1/4 cup granulated sugar (for rolling)
2 tablespoons ground cinnamon (for rolling)
1 teaspoon ground cardamom (for rolling)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and 1 1/2 cups sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, cardamom, ginger, cloves, and black pepper.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
In a small, shallow dish, mix the 1/4 cup sugar, 2 tablespoons cinnamon, and 1 teaspoon cardamom for the coating.
Scoop rounded tablespoons of dough and roll into balls. Roll each ball thoroughly in the spiced sugar mixture.
Place the coated dough balls about 2 inches apart on the prepared baking sheets.
Bake for 9 to 11 minutes, or until the edges are set and the centers are slightly soft.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a stronger chai flavor, you can steep a chai tea bag in a tablespoon of warm milk and add it to the wet ingredients.
Make sure your cream of tartar is fresh for the signature snickerdoodle tang.
Store the cooled cookies in an airtight container at room temperature.
