Ingredients
Scale
4 ears fresh corn, husks removed
1 tablespoon olive oil, plus more for dressing
1/2 cup Cotija cheese, crumbled
1 large ripe avocado, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
1 teaspoon lime zest
1/4 teaspoon ground cumin
Pinch of cayenne pepper (optional)
Salt and black pepper to taste
Instructions
Prepare the grill for medium-high heat. Brush the corn lightly with oil.
Place the corn directly on the grill grates. Grill for 10 to 12 minutes, turning every few minutes until kernels are lightly charred on all sides.
Remove corn from the grill and let it cool slightly. Stand the cob upright on a cutting board and carefully slice the kernels off the cob into a large bowl.
In a small bowl, whisk together 1 tablespoon olive oil, lime juice, lime zest, cumin, cayenne pepper (if using), salt, and pepper to make the dressing.
Add the diced avocado, chopped red onion, and cilantro to the bowl with the corn.
Pour the dressing over the salad ingredients. Gently toss everything together until lightly coated.
Fold in most of the crumbled Cotija cheese, reserving some for garnish.
Taste and adjust seasoning if needed. Serve immediately, garnished with the remaining Cotija cheese.
Notes
To get a good char, make sure your grill grates are hot before placing the corn on them.
If you do not have a grill, you can char the corn kernels in a dry cast-iron skillet over high heat until blackened spots appear.
For a creamier dressing, you can add 1 tablespoon of plain Greek yogurt to the lime mixture.
