Learn how to achieve that perfect smoky, charred flavor on your Mexican street corn using simple grilling or broiling techniques. This recipe brings the vibrant taste of elote to your table.

Ingredients

Scale
  • 4 ears of corn, husked and cleaned
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder (or to taste)
  • Optional: Tajín seasoning for garnish

Instructions

  1. Prepare your corn for charring. You can do this directly on a grill or under a broiler.
  2. If grilling: Brush the corn with olive oil. Grill over medium-high heat, turning occasionally, until kernels are tender and nicely charred on all sides. This usually takes about 8-10 minutes.
  3. If broiling: Place the corn on a baking sheet. Broil on high, turning every few minutes, until charred in spots. Watch closely to prevent burning. This takes about 5-7 minutes.
  4. While the corn is charring, mix together the mayonnaise, lime juice, and chili powder in a small bowl.
  5. Once the corn is charred to your liking, carefully remove it from the heat.
  6. Spread a thin layer of the mayonnaise mixture over each ear of corn.
  7. Sprinkle generously with crumbled cotija cheese and chopped cilantro.
  8. For an extra kick, dust with Tajín seasoning if desired.
  9. Serve immediately and enjoy your delicious charred Mexican street corn!

Notes

  • For an extra smoky flavor, you can soak the corn in water for 30 minutes before grilling.
  • Cotija cheese is traditional, but feta cheese can be substituted if cotija is unavailable.
  • Adjust the chili powder to your preferred spice level.
