Ingredients
Scale
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup (1 stick) cold unsalted butter, cut into small cubes
1 cup sharp cheddar cheese, shredded
2 tablespoons fresh chives, chopped
1 tablespoon fresh parsley, chopped
3/4 cup heavy cream, plus more for brushing
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Work quickly to keep the butter cold.
Stir in the shredded cheddar cheese, chives, and parsley until evenly distributed.
Pour in the heavy cream. Mix gently with a fork until just combined into a shaggy dough. Do not overmix.
Turn the dough out onto a lightly floured surface. Gently knead it 3 or 4 times until it comes together.
Pat the dough into a circle about 3/4 inch thick.
Cut the circle into 8 equal wedges, like a pizza.
Place the wedges on the prepared baking sheet, spacing them slightly apart.
Brush the tops lightly with extra heavy cream.
Bake for 15 to 18 minutes, or until the tops are golden brown.
Cool on the baking sheet for a few minutes before moving to a wire rack. Serve warm.
Notes
Keep your butter very cold for the flakiest texture.
You can substitute other herbs like dill or thyme for variety.
These scones freeze well after baking; reheat in a warm oven.
