Make a satisfying deconstructed cheeseburger bowl that is low-carb friendly and perfect for meal prepping for the week.

Ingredients

Scale
  • 1.5 lb ground beef (80/20 recommended)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 4 cups shredded iceberg or romaine lettuce
  • 1 cup diced tomatoes
  • 0.5 cup sliced dill pickles
  • 0.5 cup chopped white onion
  • 4 slices cheddar cheese
  • For the Sauce: 0.5 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon ketchup (sugar-free if strictly low-carb)
  • 1 teaspoon apple cider vinegar
  • 0.5 teaspoon smoked paprika

Instructions

  1. In a bowl, mix the ground beef with salt, pepper, garlic powder, and onion powder. Form into four equal patties.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until cooked through.
  3. During the last minute of cooking, place one slice of cheddar cheese on each patty and cover the skillet briefly to melt the cheese. Remove patties and let them rest.
  4. While the beef cooks, prepare the sauce. Whisk together mayonnaise, mustard, ketchup, apple cider vinegar, and smoked paprika in a small bowl.
  5. To assemble the bowls, divide the shredded lettuce among four containers or bowls.
  6. Top the lettuce with diced tomatoes, sliced pickles, and chopped onion.
  7. Place one cheesy beef patty on top of the vegetables in each bowl.
  8. Drizzle generously with the tangy burger sauce.
  9. If meal prepping, store the sauce separately and add just before serving.

Notes

  • You can substitute ground turkey or chicken for the ground beef if desired.
  • For a non-low-carb option, serve this mixture over 1 cup of cooked white rice instead of lettuce.
  • Make a double batch of the sauce to use on salads or as a dip later.
