Ingredients
Scale
3 cups sliced yellow squash
3 cups sliced zucchini
1 medium onion, chopped
4 tablespoons butter, melted, divided
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup sour cream
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese, divided
1 teaspoon salt
1/2 teaspoon black pepper
1 cup crushed Ritz crackers
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Place the sliced squash and onion in a large pot. Add just enough water to cover the vegetables. Bring to a boil and cook until tender-crisp, about 5 to 7 minutes. Drain the vegetables well.
In a large bowl, combine the drained squash and onion mixture with the cream of chicken soup, sour cream, cheddar cheese, 1/4 cup of the Parmesan cheese, salt, and pepper. Mix until everything is evenly coated.
Spread the mixture evenly into the prepared baking dish.
In a small bowl, combine the crushed Ritz crackers with 2 tablespoons of the melted butter. Sprinkle this mixture over the top of the casserole.
Bake for 25 minutes.
Remove the casserole from the oven. Sprinkle the remaining 1/4 cup of Parmesan cheese over the cracker topping. Drizzle with the remaining 2 tablespoons of melted butter.
Return to the oven and bake for another 5 to 10 minutes, or until the topping is golden brown and the casserole is bubbly.
Notes
For a gluten-free version, substitute the Ritz crackers with crushed gluten-free butter crackers or panko breadcrumbs mixed with melted butter.
You can substitute Gruyere cheese for the cheddar cheese for a nuttier flavor.
This casserole tastes best when allowed to rest for 5 minutes after removing it from the oven before serving.
