Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup slivered almonds
  • 1/2 cup dried cherries, chopped
  • 1/4 cup additional slivered almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time. Mix in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped dried cherries and the 1/2 cup of slivered almonds.
  7. Turn the dough out onto the prepared baking sheet. Shape the dough into a log about 10 inches long and 3 inches wide.
  8. Bake for 25-30 minutes, or until the log is golden brown and firm to the touch.
  9. Remove from the oven. Let the log cool on the baking sheet for 10 minutes.
  10. Reduce the oven temperature to 300°F (150°C).
  11. Carefully slice the warm log diagonally into 1/2-inch thick slices.
  12. Place the slices cut-side up on the baking sheet. Sprinkle the tops with the remaining 1/4 cup of slivered almonds.
  13. Bake for another 10-15 minutes, then carefully flip the biscotti over.
  14. Bake for an additional 10-15 minutes until dry and crisp.
  15. Cool completely before serving.

Notes

  • For an extra indulgent touch, dip the cooled biscotti tips in melted dark chocolate.
  • If you prefer a softer interior, reduce the second baking time slightly.
  • Ensure your butter is truly softened for the best creaming process.
  • Use high-quality almond extract for the deepest flavor.
