Enjoy a warm, nutty breakfast porridge featuring tart cherries and crunchy almonds with this steel-cut oats recipe. It balances deep, comforting flavor with a fresh, bright taste.

Ingredients

Scale
  • 1 cup steel-cut oats
  • 3 cups water
  • 1 cup milk (dairy or non-dairy)
  • 1/2 teaspoon salt
  • 1/4 cup dried tart cherries
  • 1/4 cup sliced or slivered almonds
  • 2 tablespoons maple syrup (or to taste)
  • 1/2 teaspoon almond extract

Instructions

  1. Combine steel-cut oats, water, milk, and salt in a medium saucepan.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for 25 to 30 minutes, stirring occasionally, until the oats are tender and the liquid is absorbed.
  4. Stir in the dried tart cherries during the last 5 minutes of cooking.
  5. Remove the pan from the heat. Stir in the maple syrup and almond extract.
  6. Let the oats stand, covered, for 5 minutes before serving.
  7. Serve hot, topped with toasted almonds.

Notes

  • Toast the almonds lightly in a dry pan before serving for extra flavor.
  • For a brighter flavor, you can substitute fresh or frozen cherries (thawed) for dried cherries; add them at the end with the maple syrup.
  • This recipe keeps well in the refrigerator for up to 4 days. Add a splash of milk when reheating.
