Ingredients

Scale
  • 1 1/2 cups warm water (105-115F)
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 6 tablespoons olive oil, plus more for the pan
  • 1/2 cup unsalted butter, melted
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1 pound whole milk mozzarella cheese, sliced
  • 1/2 cup grated Parmesan cheese
  • 1 cup sliced pepperoni

Instructions

  1. Combine warm water, yeast, and sugar in a small bowl. Let stand until foamy, about 5 minutes.
  2. In a large bowl, whisk together flour and salt. Pour in the yeast mixture and 6 tablespoons of olive oil. Mix until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth.
  4. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 to 1.5 hours, until doubled.
  5. Preheat your oven to 425F. Brush a 9-inch deep dish pizza pan with melted butter.
  6. Punch down the dough. On a lightly floured surface, roll the dough into a large circle, about 14 inches in diameter.
  7. Carefully transfer the dough to the prepared pan. Press the dough up the sides of the pan, creating a deep crust. Brush the inside of the dough with the remaining melted butter.
  8. Spread the crushed tomatoes evenly over the bottom of the dough. Season the sauce with oregano, basil, and garlic powder.
  9. Arrange the mozzarella slices over the sauce. Top with pepperoni. Sprinkle with Parmesan cheese.
  10. Bake for 30-35 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
  11. Let the pizza cool in the pan for 10 minutes before slicing and serving.

Notes

  • For the best flavor, use whole milk, low-moisture mozzarella.
  • You can substitute Italian sausage for pepperoni if you prefer.
  • The buttery crust is key to the authentic Chicago style. Do not skip brushing the inside with butter.
