Enjoy a creamy, comforting Chicken Alfredo dinner without the pasta! These zucchini boats are filled with tender chicken and rich Alfredo sauce, then baked to perfection. A delicious low-carb alternative for your family.

Ingredients

Scale
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 cup cooked shredded chicken
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis and slice them in half lengthwise.
  3. Use a spoon to scoop out the seeds and some of the flesh from each zucchini half, creating a boat.
  4. Chop the scooped-out zucchini flesh finely and set aside.
  5. Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
  6. Add the shredded chicken and chopped zucchini flesh to the skillet. Cook for 2-3 minutes, stirring occasionally.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Stir in the grated Parmesan cheese. Season with salt and pepper. Cook until the sauce thickens slightly, about 3-5 minutes.
  9. Spoon the chicken Alfredo mixture evenly into the hollowed-out zucchini boats.
  10. Place the stuffed zucchini boats on a baking sheet.
  11. If desired, sprinkle mozzarella cheese over the top of each boat.
  12. Bake for 20-25 minutes, or until the zucchini is tender and the topping is golden brown.
  13. Serve hot and enjoy your delicious low-carb meal!

Notes

  • You can use leftover cooked chicken for this recipe.
  • Feel free to add other vegetables like mushrooms or spinach to the filling.
  • For a lighter sauce, you can use half-and-half instead of heavy cream.
