Ingredients
Scale
1/4 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
2 tablespoons granulated sugar
1/8 teaspoon baking powder
Pinch of salt
2 tablespoons milk (dairy or non-dairy)
1 tablespoon vegetable oil
1/4 teaspoon vanilla extract
1 tablespoon chocolate chips (optional, for extra molten center)
Ice cream, for serving
Instructions
In a microwave-safe mug (about 10-12 oz size), whisk together the flour, cocoa powder, sugar, baking powder, and salt until combined.
Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Stir well until the batter is smooth. Do not overmix.
If using, gently press the chocolate chips into the center of the batter.
Microwave on high for 60 to 90 seconds. Cooking time varies by microwave; check at 60 seconds. The edges should look set, but the center should still look slightly soft or gooey.
Let the cake cool for one minute.
Top immediately with a scoop of your favorite ice cream and enjoy your warm, gooey dessert.
Notes
For a richer flavor, use melted butter instead of vegetable oil.
If you want a more intense chocolate flavor, add a tiny pinch of instant espresso powder to the dry ingredients.
Watch the cooking time closely; overcooking results in a standard chocolate cake, not a lava cake.
