Make these festive Christmas sprinkle cookies easily. They are soft, chewy, and packed with colorful holiday sprinkles, perfect for cookie exchanges or gifting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant vanilla pudding mix (optional, for extra softness)
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup Christmas sprinkles (red, green, and white jimmies or nonpareils)
  • 1/2 cup extra Christmas sprinkles for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This step builds the base for your soft cookies.
  3. Beat in the egg, vanilla extract, and instant vanilla pudding mix, if using, until just combined.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  6. Gently fold in the 3/4 cup of Christmas sprinkles.
  7. Place the remaining 1/2 cup of sprinkles onto a shallow plate.
  8. Scoop rounded tablespoons of dough and roll them into balls. Roll each dough ball completely in the extra sprinkles until coated.
  9. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them. You do not need to flatten them.
  10. Bake for 9 to 11 minutes, or until the edges are set but the centers still look slightly soft. These are your soft and chewy Christmas sprinkle cookies.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the best soft and chewy texture, do not overbake. The cookies will firm up as they cool.
  • This recipe requires no chill time, making it a quick Christmas dessert option.
  • You can substitute some of the sprinkles inside the dough with white chocolate chips for added flavor.
  • These cookies are excellent for holiday cookie exchange recipes.
