Ingredients
Scale
Crepes: 1 cup all-purpose flour
1 large egg
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter, plus more for cooking
Filling: 2 medium apples, peeled, cored, and thinly sliced
1 tablespoon butter
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
Instructions
Make the crepe batter: Whisk flour and salt in a bowl. Add egg, milk, and water; whisk until smooth. Stir in melted butter. Let the batter rest for 30 minutes.
Prepare the filling: Melt 1 tablespoon butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples soften, about 5 to 7 minutes. Stir in lemon juice. Set aside and keep warm.
Cook the crepes: Lightly brush an 8-inch non-stick skillet with butter and heat over medium heat. Pour about 1/4 cup of batter into the center, tilting the pan quickly to spread the batter thinly and evenly.
Cook for about 1 to 2 minutes until the edges brown lightly. Flip and cook the other side for about 30 seconds. Slide the crepe onto a plate.
Repeat with the remaining batter, buttering the pan lightly between crepes.
Fill and serve: Place a spoonful of the warm apple filling onto one half of each crepe. Fold the crepe in half, then in half again to form a triangle, or roll it up. Serve immediately.
Notes
Resting the batter helps the flour hydrate, resulting in more tender crepes.
For a lighter crepe, use a mix of half milk and half sparkling water.
You can dust the finished crepes with powdered sugar before serving.
