Bake classic French toast flavor into convenient, fluffy muffins with a sweet cinnamon sugar crust.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar (for batter)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup sour cream or plain yogurt
  • 1 cup cubed stale bread (optional, for texture)
  • 1/2 cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, 1/2 teaspoon cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the 1/2 cup sugar, melted butter, egg, vanilla extract, milk, and sour cream until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. If using, fold in the cubed stale bread.
  5. In a small bowl, mix the 1/2 cup sugar and 2 teaspoons cinnamon for the topping.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Dip the top of each filled muffin cup lightly into the cinnamon sugar mixture, or sprinkle generously over the top.
  8. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use fresh bread cubes, but stale or slightly dry bread absorbs the custard mixture better for an authentic French toast texture.
  • For a richer flavor, substitute half the milk with heavy cream.
  • If you prefer a glaze, mix 1 cup powdered sugar with 2 tablespoons milk and a dash of vanilla, then drizzle over cooled muffins.
