Start your morning right with this incredible Cinnamon Swirl Coffee Cake. It brings together deep, comforting flavors with a fresh, bright swirl. This cake offers a hearty start to your day, balancing tradition and new inspiration, just like Jun and Mei’s kitchen.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • For the Swirl:
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • For the Glaze (Optional):
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan or tube pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. You are building the base for comfort.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  6. Prepare the swirl: In a small bowl, combine the brown sugar and cinnamon. Pour half of the batter into the prepared pan.
  7. Drizzle the melted butter over the batter. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  8. Top with the remaining batter. Use a knife to gently swirl the layers together a few times for that beautiful ribbon effect.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
  11. If using the glaze, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
