Get the tender, classic flavor of slow-cooked pot roast quickly using the Instant Pot. This recipe balances tradition with speed for a comforting meal.

Ingredients

Scale
  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 potatoes, quartered (added later)

Instructions

  1. Pat the beef roast dry and season generously with salt and pepper.
  2. Set the Instant Pot to Sauté mode. Add olive oil. Brown the roast on all sides, about 3-4 minutes per side. Remove the roast and set aside.
  3. Add onion, carrots, and celery to the pot. Sauté for 5 minutes until slightly softened. Add garlic and cook for 1 minute more.
  4. Deglaze the pot by pouring in the red wine (if using), scraping up any browned bits from the bottom. Let it reduce for 1 minute.
  5. Return the roast to the pot. Pour in the beef broth and Worcestershire sauce. Add thyme, rosemary, and bay leaf.
  6. Secure the lid and set the vent to Sealing. Cook on High Pressure for 60 minutes.
  7. Once cooking is complete, allow a Natural Pressure Release for 15 minutes, then carefully perform a Quick Release for any remaining pressure.
  8. Remove the roast and set aside to rest. Skim any excess fat from the liquid.
  9. Add the quartered potatoes to the broth in the pot. Secure the lid and cook on High Pressure for 5 minutes (Quick Release immediately after cooking).
  10. Shred or slice the roast. Serve the meat and vegetables with the cooking liquid spooned over top.

Notes

  • For deeper flavor, you can sear the roast in a separate pan before using the Instant Pot.
  • If you skip the wine, use an extra 1/2 cup of beef broth.
  • Shredding the meat works best for maximum tenderness.
  • If your broth seems too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the liquid after removing the vegetables, then set the Instant Pot to Sauté mode until thickened.
