Ingredients
Scale
1/4 cup chia seeds
1 cup full-fat coconut milk
2 tablespoons maple syrup (or to taste)
1 teaspoon lime zest
2 tablespoons fresh lime juice
Pinch of salt
For layering: sliced fresh mango or pineapple
For topping: toasted coconut flakes
Instructions
In a jar or bowl, whisk together the chia seeds, coconut milk, maple syrup, lime zest, lime juice, and salt.
Stir well after 5 minutes to prevent clumping.
Cover and refrigerate for at least 4 hours, or preferably overnight, until the pudding has thickened.
When ready to serve, spoon half of the chia pudding into a glass.
Layer with sliced fresh mango or pineapple.
Top with the remaining chia pudding.
Garnish generously with toasted coconut flakes.
Serve immediately and enjoy your bright start to the day.
Notes
For a thicker pudding, increase the chia seeds slightly.
Always use full-fat coconut milk for the best creamy texture.
Taste and adjust the sweetness or tartness based on your preference.
