Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup cookie butter (Biscoff spread), slightly warmed
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper, leaving an overhang.
In a large bowl, whisk together the melted butter and granulated sugar until well combined.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate medium bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Pour about two-thirds of the blondie batter into the prepared baking pan and spread evenly.
Dollop spoonfuls of the warmed cookie butter over the batter in the pan.
Pour the remaining blondie batter over the cookie butter.
Using a knife or skewer, gently swirl the cookie butter into the blondie batter.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
Let the blondies cool completely in the pan before cutting into bars.
Notes
For an extra gooey center, you can slightly underbake the blondies.
Ensure the cookie butter is slightly warmed, not hot, to make swirling easier.
You can use any brand of cookie butter you prefer.
