Make this simple, non-alcoholic spritzer using fresh cucumber and mint for a very cooling summer drink.

Ingredients

Scale
  • 1 medium cucumber, peeled and roughly chopped
  • 1/2 cup fresh mint leaves, packed
  • 1/4 cup fresh lime juice
  • 2 tablespoons simple syrup (or to taste)
  • 1 cup cold water
  • 2 cups club soda or sparkling water, chilled
  • Ice cubes

Instructions

  1. Place the chopped cucumber, mint leaves, lime juice, and simple syrup into a blender.
  2. Add 1 cup of cold water. Blend until completely smooth.
  3. Pour the mixture through a fine-mesh sieve into a bowl or pitcher, pressing down on the solids to extract all the liquid. Discard the solids. This is your cucumber-mint base.
  4. To serve, fill glasses with ice cubes.
  5. Pour the cucumber-mint base into each glass, filling about one-third full.
  6. Top the rest of the glass with chilled club soda or sparkling water.
  7. Stir gently and garnish with a thin cucumber ribbon or a mint sprig.

Notes

  • For a sweeter drink, increase the simple syrup to 3 tablespoons.
  • If you do not have simple syrup, dissolve 2 tablespoons of granulated sugar in 2 tablespoons of hot water, then cool before using.
  • Prepare the cucumber-mint base up to 24 hours in advance and store it covered in the refrigerator. Add the sparkling water just before serving.
