Make these incredibly soft and fluffy Cool Whip Cookies using just a few pantry staples. This quick cookie recipe delivers a melt-in-your-mouth texture perfect for last-minute baking or holiday platters.

Ingredients

Scale
  • 1 box (15.25 ounces) white cake mix
  • 1 container (8 ounces) frozen whipped topping, thawed (Cool Whip)
  • 1 large egg
  • Powdered sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of dry cake mix, the thawed whipped topping, and the egg. Mix gently with a spatula until just combined. Do not overmix the dough.
  3. Place about 1/4 cup of powdered sugar in a shallow dish.
  4. Scoop the dough into rounded tablespoons. Roll each scoop lightly in the powdered sugar to coat.
  5. Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them. They will spread slightly.
  6. Bake for 10 to 12 minutes, or until the edges are set and the tops look slightly puffed.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • You can use any flavor of cake mix, such as chocolate or strawberry, to change the cookie flavor.
  • For a crinkle effect, roll the dough balls generously in powdered sugar before baking.
  • These cookies are best eaten within 2 days for the softest texture.
