Ingredients
Scale
1 cup cottage cheese
6 large eggs
1/4 cup milk or unsweetened almond milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese (e.g., Monterey Jack or Gruyere)
1/2 cup cooked, chopped fillings (e.g., spinach, bacon, bell peppers)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin.
In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until completely smooth.
Stir in the shredded cheese and your chosen cooked fillings into the egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Place the muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches halfway up the sides of the muffin tin (this creates a water bath).
Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
Remove the tin from the water bath and let the cups cool in the tin for 5 minutes before removing them.
Notes
For a smoother texture similar to sous vide, blend the cottage cheese mixture longer until no curds remain.
These cups store well in the refrigerator for up to 4 days for meal prep.
