A quick, single-serving brownie made in the microwave using cottage cheese for added protein and a fudgy texture.

Ingredients

Scale
  • 1/4 cup blended cottage cheese
  • 1 tablespoon cocoa powder
  • 1 tablespoon sweetener (e.g., erythritol or sugar)
  • 1 teaspoon melted coconut oil or butter
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon almond flour or oat flour
  • 1/4 teaspoon baking powder
  • 1 small square (5g) dark chocolate, chopped (optional)

Instructions

  1. Place the cottage cheese in a small, microwave-safe mug or ramekin. Blend it briefly with a fork or small whisk until mostly smooth.
  2. Add the cocoa powder, sweetener, melted oil, and vanilla extract to the mug. Mix until just combined.
  3. Stir in the flour and baking powder until no dry streaks remain. Do not overmix.
  4. If using, press the chopped dark chocolate into the top of the batter.
  5. Microwave on high power for 50 to 70 seconds. Cooking time depends on your microwave wattage; start with 50 seconds.
  6. The brownie is done when the edges look set but the center is still slightly soft and fudgy.
  7. Let it cool in the mug for 1 minute before eating directly from the container.

Notes

  • For the smoothest texture, blend the cottage cheese until completely smooth before adding other ingredients.
  • If you prefer a cake-like texture, add 1/2 teaspoon of milk or water to the batter.
  • You can add 1 teaspoon of chocolate chips or chopped nuts along with the batter.
