Ingredients
Scale
1 (about 1 to 1.5 lb) pork tenderloin
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup fresh or frozen cranberries
1/2 cup balsamic vinegar
1/4 cup brown sugar, packed
2 tablespoons orange juice
1 teaspoon Dijon mustard
Instructions
Preheat your oven to 400 degrees F (200 degrees C).
Rub the pork tenderloin all over with olive oil, salt, and pepper. Place it in a roasting pan.
Roast the pork for 20 to 25 minutes, or until a meat thermometer reads 145 degrees F in the thickest part.
While the pork roasts, make the glaze. Combine cranberries, balsamic vinegar, brown sugar, orange juice, and Dijon mustard in a small saucepan.
Bring the mixture to a simmer over medium heat. Cook for 5 to 7 minutes, stirring occasionally, until the cranberries begin to pop and the sauce thickens slightly.
Pour the glaze over the roasted pork tenderloin during the last 5 minutes of cooking, or brush it on immediately after removing the pork from the oven.
Let the pork rest loosely covered with foil for 5 to 10 minutes before slicing.
Slice the tenderloin and spoon any extra pan juices or glaze over the slices before serving.
Notes
The sauce will thicken more as it cools.
You can use dried cranberries if fresh are unavailable, but you may need to simmer the sauce slightly longer.
Pork is safely cooked when it reaches an internal temperature of 145 degrees F.
