These Cranberry Brie Bites are a simple, crowd-pleasing appetizer combining creamy brie, tart cranberry sauce, and flaky puff pastry. They are quick to assemble and perfect for any gathering.

Ingredients

Scale
  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 8 ounces brie cheese, cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)
  • Optional: finely chopped pecans or fresh rosemary for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Lightly flour a clean work surface. Unfold the thawed puff pastry sheets.
  3. Use a 2-inch round cookie cutter to cut circles from the puff pastry. You should get about 18-24 circles per sheet.
  4. Place half of the pastry circles on the prepared baking sheets.
  5. Top each pastry circle with a small cube of brie cheese.
  6. Place a small dollop (about 1/2 teaspoon) of cranberry sauce on top of the brie.
  7. Brush the edges of the bottom pastry circles lightly with the beaten egg wash.
  8. Place a second pastry circle on top of the filling and gently press the edges together to seal. Crimp the edges with a fork.
  9. Brush the tops of the sealed bites with the remaining egg wash. If desired, sprinkle with chopped pecans or rosemary.
  10. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
  11. Let the bites cool slightly on the baking sheet before serving warm.

Notes

  • Make sure the puff pastry is fully thawed but still cold for the best rise.
  • Do not overfill the bites, or the cheese may ooze out too much during baking.
  • If you do not have a 2-inch cutter, you can cut squares instead.
  • These are best served the day they are made.
